Metz Culinary Management Sprouts VegFest in October

In honor of National Vegetarian Month, Metz Culinary Management, Inc. (Metz) served up its annual VegFest in October 2022. This year’s VegFest featured healthy, plant-based, and environmentally friendly foods that delighted taste buds across our corporate dining, healthcare, K-12, higher education, and independent school partners.

Throughout the month, our chefs created mouthwatering recipes, full of protein and flavor, putting a plant-based spin on favorite entrees, side dishes, and desserts. Niagara University, located in Niagara Falls, New York, took the celebration further by dishing up newly crafted menu offerings available at the university’s LiveWell station at the Dining Commons. Creative offerings sprouting up included crabless crab cakes, red bean Swedish meatballs, buffalo cauliflower, and more.

“We celebrate VegFest all year long by offering vegan, vegetarian, and gluten-free options for our students and staff, and we partner with the Humane Society to deliver environmentally friendly foods,” said Tony Renda, Executive Chef for Niagara University Food Services. “VegFest provides us with a month-long opportunity to develop exciting new recipes, such as meatless meatloaf, that our students and staff love.”

Students can scan a QR code on their phones to tap into Nutritics, our nutrition software, to view daily and weekly menus. Nutritics also provides details on nutritional content, allergens and food preferences.

“By accessing Nutritics, anyone can see exactly what is being served every day and locate specialty foods such as plant-based and dairy-free items that they may be looking for,” said Chef Tony. “This information is especially useful for our student athletes and anyone desiring unique menu options.”
