University of Detroit Mercy Partners with Metz Culinary Management for Campus Dining Services

Metz will bring signature food concept stations that improve the quality and variety of fresh and healthy dining options on Detroit Mercy campuses

University of Detroit Mercy has partnered with Metz Culinary Management to provide dining services for students, faculty, staff and guests effective July 1, 2017.

Under the five-year agreement, Metz Culinary Management will implement signature food concept stations and catering services expected to improve the quality and variety of fresh, healthy and sustainable dining options at the McNichols, Corktown, and Riverfront campuses.

“Metz Culinary Management is looking forward to working with University of Detroit Mercy to implement culinary options that fit the individualized needs of all the audiences we serve,” said Mark Carone, District Manager at Metz Culinary Management. “We are dedicated to providing our reputable services at University of Detroit Mercy’s three campuses, just as we have for our other partners.”

University of Detroit Mercy joins more than 35 college and university accounts in the Metz portfolio spanning from Michigan to Florida. Metz Culinary Management serves about 150,000 students and faculty each day.

Original Metz signature food concept stations in Detroit Mercy residential dining will include:
• Bravo, an open concept where chefs prepare a rotating selection of dishes in front of guests
• Main Plate, offering a selection of classic favorites, trendy gourmet selections, and specialty sandwiches
• J. Clark’s Grille, featuring house-grilled specialty burgers and hot sandwiches, wings, fries, and more
• Villa Toscana, made-to-order Italian specialties including hand-prepared stromboli and pizza and fresh pasta
• Green Scene, Metz’s salad bar concept with a wide selection of fresh and local items

The McNichols Campus will feature residential dining services and retail operations. Retail installments available at The Loft will include Designer Burgers, Subway and Up-For-Grabs. Metz will also provide a C-Store convenience store in Shiple Hall. The Library will feature Metz’s InterMetzo Concept and provide fresh-baked products and Up for Grabs (sandwiches, salads and snacks) as well as fresh coffee, espresso and cappuccino using locally roasted coffee beans from the nearby Detroit Bold Coffee company.

Detroit Mercy’s Corktown Campus will feature Market Street Deli, J. Clark’s Grill, Up for Grabs and coffee from Detroit Bold. The university’s law school, located at the Riverfront campus, will feature Metz’s fresh market concept, J Clark’s Grill and Up-For-Grabs along with coffee products from Detroit Bold.

The University selected Metz Culinary Management because of its family-owned culture and its commitment to meeting the individual needs of our students. The selection panel was also impressed by its focus on fresh ingredients, culinary expertise and excellent hospitality, said Tammy Batcheller Associate Vice President at the University.

University of Detroit Mercy is Michigan’s largest and most comprehensive Catholic university, sponsored by the Religious Sisters of Mercy and the Society of Jesus (the Jesuits). It boasts the heritage of two founding institutions: the University of Detroit, founded in 1877 by the Jesuits, and Mercy College of Detroit, founded by the Sisters of Mercy in 1941. They consolidated as University of Detroit Mercy in 1990. The university offers more than 100 academic degrees and programs through seven schools and colleges and has an enrollment of about 5,000 students.
