Metz’s Innovation Table Invites Diners to Try Something New

Metz Culinary Management, Inc. (Metz) has introduced Innovation Table – an entertaining popup enhancement for guests. Created for Higher Ed, Corporate and Healthcare partners, Innovation Table runs for one day a month with a unique meal offering that is not part of Metz’s regular menu cycle. It’s a treat for guests and allows Metz’s chefs to create and test new recipes.

“We wanted to inspire our chefs to go above and beyond in creating a popup dining experience,” said Adam Carlson, Division Chef, K12 and B&I Dining, Metz. “Innovation Table has become a perfect opportunity to introduce new dishes, including our global recipes, get feedback from our guests and create buzz around them.”

Metz’s Innovation Table has included:

  • BBQ Slider Bar featuring smoked brisket, pulled chicken and grilled portabella mushroom sliders with a choice of BBQ sauces, including Kansas City, Carolina and Alabama White. Sliders are topped with creamy slaw, cheddar cheese, fried onion straws and served with a side of macaroni salad.
  • Steakhouse Loaded Mashed Potatoes delivering a twist on the classic loaded potato with creamy, garlic, smashed, Yukon gold potatoes topped with grilled marinated flank steak, grilled onions and mushrooms, crispy fried onions and steak sauce.
  • MingsBings (vegetarian) from renowned Chef Ming Tsai, featuring a plant-powered brown-rice paper pocket filled with a variety of gluten-free and vegan ingredients. Offerings include: Chorizo Bing with Mexican street corn salsa and crumbled cotija cheese and Cheeseburger Bing with arugula, grape tomatoes and pickled red onions.
  • Honey Ginger Salmon Bowl featuring crispy honey ginger Atlantic salmon served on a bed of jasmine rice and topped with a pineapple mango relish, candied jalapenos and a choice of sriracha crema or sweet chili gochujang.
  • Depending on the location, Innovation Table offerings can be served on small plates as an addition to the guest’s meal or full portions for locations such as corporate partners with shorter lunch service times.

“Our guest absolutely loved the popup concept as a break from the norm, and when we offered BBQ sliders, we sold 156 sliders in 90 minutes,” said Phil Hudak, Chef/General Manager Westfield Insurance, Metz. “A number of guests come back later that day and the following day to tell us the brisket was the best they have ever had and the other sliders were delicious.”

Even though the Westfield location guests tend to prefer meat and potatoes to vegetarian options, the MingsBings popup event sold 54 orders in 90 minutes. Many guests who didn’t think they would like them had positive things to say about them.

“Innovation Table gets a lot of people excited because it is something different, especially coming out of COVID-19,” said Carlson. “It brought people back into the dining hall because they wanted to check out the excitement around the event.”

Metz is planning to relaunch Innovation Table in early 2024 as part of Metz’s commitment to delighting guests with recipes that elevate their dining experience.
