Metz Culinary Management, Inc. (Metz) continues to jazz up the menu with its popular Street Eats program for independent schools, corporate dining, healthcare, higher education and senior dining partners. First launched in late 2022, Street Eats features on-trend, pop-up promotions inspired by food-truck-style dishes that entice and excite guests.

Crispy Pork Belly with Sweet Chili Hoisin Glaze and Pickled Vegetable Slaw
“Bao Buns is our latest Street Eats menu item,” said Tim Morris, District Chef- Northeast Region, Executive Chef- Arcadia University, for Metz. “It’s unique and you don’t often see it in dining halls. So, this was a great opportunity to introduce Bao Buns to our guests.”
A steamed bun, a bao delivers a natural sweetness in a light fluffy roll that is folded like a taco and filled with a variety of ingredients. Because it naturally blends with many bold flavors, Bao Buns lend themselves to a multitude of fusions.
Metz chefs rolled out several Bao Buns recipes in September, including:
- Crispy shrimp
- Crispy tofu
- Buttermilk chicken
- Crispy pork belly
- Breakfast version with eggs and sriracha sauce
“It’s one of the most successful limited-time offerings we’ve introduced,” said Morris. “Now that Bao Buns have been incorporated into our corporate recipes, any Metz culinary location can offer them anytime they want.”
