Metz Celebrates Paris 2024 with a World of Barbecue Flavors

Barbecue. It’s the American summertime favorite, right? Yes, but it’s more than that. Barbecue is known and enjoyed throughout the world, with different cultures and regions taking their own distinctive approach to the basic concept.

That global appeal, plus the festivities surrounding the Summer Games in France, inspired Metz Culinary Management to make barbecue the main course in its annual “Red, White & Taste” promotion. Now through August 11, 2024, all Metz hospital, corporate, and institutional kitchens will be serving a dozen different, internationally inspired, barbecue-based entrees along with other summertime dishes.

“Our goal is to excite diners who have never encountered these wonderful international flavor profiles, as well as delight those who are familiar with them but seldom find them,” said Metz Corporate Chef Xavier Smith.

Recipes were developed by a team that includes Chef Adam Carlson, Division Chief, K-12 and Business & Industry; Culinary Director John Selick; and Chef Hannah Alvarez, Healthcare Division Chief, and Chef Xavier.

For protein, Metz partnered with Brookwood Farms, whose range of products, including brisket, burnt ends, pulled pork, and pulled chicken, also supplied the chefs with additional inspiration.

Some examples on the Red, White & Taste menu include:

  • Burnt Ends flavored with bold spices like cinnamon, coriander, and garam marsala, served with fresh peanuts;
  • Suya – West African spiced beef with suya sauce made with coconut milk, peanuts, and cilantro;
  • Vietnamese Shredded Beef in lettuce wraps;
  • Dibi, a Senegalese dish of seasoned, roasted, and grilled beef;
  • Pork/Brisket Tamale Pie with cheddar jalapeno crust.

Naturally, Pulled Pork with baked beans is on the menu to satisfy traditional American tastes.

“The Summer Games bring together people from around the world to share their lives and experiences,” said Chef Xavier. “We wanted this year’s Red, White and Taste promotion to give diners a taste of that.”
